1/2 cup fat-free sour cream
1/2 cup low-fat cottage cheese
1/2 cup plain low-fat yogurt
3 Tbsp grated parmesan cheese
1 clove garlic, minced
Salt and pepper, to taste
1 can (8-oz.) water chestnuts, chopped
1/2 cup frozen chopped spinach, defrosted and squeezed dry
24 low-fat phyllo dough “mini” shells

In a food processor, puree sour cream, cottage cheese, yogurt, parmesan cheese, garlic, salt and pepper.
