Broil chicken for 1 hour; cooking time varies on temperature. Remove bones from chicken, cut in cubes, and then set aside on separate bowl. Chop onion and garlic, set aside. On medium heat add a dash of olive oil and saute chopped onion and garlic.
Add chicken cubes on a separate dish and add all canned ingredients and Ro*Tel tomatoes remember to drain some of the juice. You may add some of the chicken broth for more flavor like 1 Tbsp. Mix all chicken, spices, and canned soups together. Use a small skillet with olive oil or vegetable cooking oil to soften tortillas. When tortillas are soft not too high on the stove or tortilla will harden.
In a casserole dish or oven pan layer corn tortillas all around and add the chicken mixture at a time. Keep layering until all chicken mixture is done. Then also keep adding the desired cheese on each layer as you want.
Bake at 350 degrees F for 15 minutes or until cheese melts.
