Pepper Steak

Original recipe yields 1 serving
2 lb flank steak
2 Tbsp shortening
3 green bell peppers, cut into 1 1/2 inch pieces
1 medium size onion, cut into 1 1/2 inch pieces
2 cups water
1 package onion soup mix
2 Tbsp soy sauce
1/2 tsp salt
1/2 tsp pepper
2 Tbsp cornstarch
Cooked white rice (about 2 - 3 cups)

Cut steak lengthwise into 1/2 inch strips and then into 1 inch pieces. Melt shortening in a skillet and fry steak just long enough for meat to change colors. Remove meat and saute green peppers and onions in the juice from the meat, for about 5 minutes.

In a large pot bring the 2 cups of water to a boil. Then add the soup mix and continue to boil for another 10 minutes.

Stir in meat, peppers and onions. Let simmer for 30 minutes. Add soy sauce, salt, pepper, and cornstarch (diluted in a little water). Cook until slightly thickened. Serve over cooked rice.
