Put diced apples in a large bowl with the 2 cups of sugar, set aside for 30 minutes.
While waiting put your liquid ingredients together: vanilla, eggs that are beaten and oil. In another bowl combine the dry ingredients: flour, baking soda, cinnamon, salt and chopped nuts. Mix dry ingredients with nuts together. After the 30 minutes is up add the liquid ingredients to the apples and sugar then add the dry ingredients.
Bake in a bundt cake pan that is well greased and floured. Bake at 350°F for 50 to 60 minutes. When taken out of oven let set for 20 minutes with towel over it and then dump on plate or bake in a square cake pan.
