Original recipe yields 1 serving
1 chub bulk breakfast sausage, any flavor (I used Hot)
3 cartons (8 oz. each) egg substitute
1 cup reduced fat cheddar cheese
1/2 cup chopped fresh mushrooms (optional)
1/2 cup chopped onion (optional)
1/4 tsp pepper

Let's Make It

Preheat oven to 350°F. Cook and drain the sausage. Mix sausage and remaining ingredients in a large bowl (or use the sausage as a "crust", if desired).

Pour into a non-stick sprayed 13 x 9 inch baking dish.

Bake, uncovered, for 30-35 min., or until a knife inserted near the center comes out clean.
