Original recipe yields 1 serving
1 can (15 oz.) solid packed pumpkin
1 can (12 oz.) evaporated milk
3 eggs
1 1/2 cups sugar
1 Tbsp cinnamon
1/2 tsp salt
1 yellow cake mix
1/2 cup chopped pecan nuts (I use walnuts)
1 cup melted butter

Preheat oven to 350 degrees F. Grease bottom of 9 x 13 inch pan. Combine pumpkin, evaporated milk, eggs, sugar, cinnamon and salt in a large bowl. Whisk until combined.

Pour mixture in pan and sprinkle with dry cake mix evenly over pumpkin mixture. Top with nuts and drizzle melted butter over nuts.

Bake for 55 to 60 min or until golden brown. Cool, serve chilled.
