Original recipe yields 1 serving
1 med onion, chopped
2 Tbsp minced garlic
1/2 cup shredded carrot
3 Tbsp olive oil OR butter
1/3 cup all purpose flour
1 tsp salt
Pepper to taste
1/4 tsp ground nutmeg
2 cups milk
1 cup cream (non dairy liquid creamer may be used)
1 cup water
1 cup Velveeta Cheese Cubes
1 pkg (10 oz.) frozen chopped spinach, thawed and pressed dry
2-3 dash es hot sauce, or to taste

In large 3 qt. saucepan, saute the onion, garlic, and carrot in oil until tender.

Stir in the flour, salt, pepper, and nutmeg. Stir until smooth. Gradually whisk in the milk, cream, and water. Add cheese and cook over medium heat until cheese is melted...stirring often.

Add thoroughly drained spinach, reduce heat, cover and allow to simmer for 5 minutes. Serve with hot, crispy garlic bread.
