Saute onion in 1 Tbsp. oil for 3 minutes. Add tomatoes and juice. Simmer until most of the juice is absorbed. Add chopped cilantro. Keep warm.
While sauce is cooking, brown chicken breasts in 2 Tbsp. oil until cooked through.
Top each breast with 1 piece of Kraft Pepper Jack Cheese. Let the cheese melt and then spoon sauce on top of each breast. Sprinkle more chopped cilantro on top.
