Original recipe yields 1 serving
1 sweet onion, finely chopped
Juice of 3 lemons
Juice of 2 limes
4 oz Tequila
1/2 cup extra virgin olive oil
4 cloves chopped garlic
1/2 cup chopped cilantro
1 teaspoon Liquid Smoke
Salt and Pepper to taste
1 fryer chicken (3 to 4 pound)

Combine all ingredients and marinade chicken for 1 hour in refrigerator.

Use vertical chicken roaster. Add leftover marinade (discarded lemon and limes) to vertical roaster pan.

Cook for 1.5 hours at 400 degrees F. Remove from roaster and let stand 10 minutes before serving.
