1/2 cup diced peeled avocado
2 Tbsp balsamic vinegar
1 Tbsp olive oil
1 tsp ground cumin
1/2 tsp black pepper
3 cups cooked rice
1 1/2 cups chopped plum tomato (about 4 tomatoes)
1/4 cup fresh chopped parsley
1 can (15 oz.) black beans, rinsed and drained
3 Tbsp chopped fresh cilantro
