1/4 teaspoon salt
1-1/2 cups flour
2/3 cup BAKER'S ANGEL FLAKE Coconut
1/4 teaspoon coconut extract
1/2 cup milk

Preheat oven to 350 degrees F. Cream sugar, butter, and then eggs together. Mix in all other ingredients.

Divide evenly into greased muffin pans (usually makes around 8 large muffins).

Bake in oven approximately 20 - 25 minutes (sometimes longer). Stick a toothpick in muffin and make sure it comes out clean to check if done.
