1 slab (8 oz.) bacon (without rind), diced into 1/2" cubes or 8 oz. ends & pieces
1 clove Elephant Garlic, minced
1 lg. white onion, diced small
2 lg. tomatoes, diced
1 bunch cilantro, chop all leaves and part of stems just below leaves

Let's Make It
Rinse and cover pinto beans with water and soak in refrigerator overnight.
In large pot (8-10 quarts) add drained pinto beans, diced bacon, minced garlic and water to within 3"-4" from top of pot. Bring to boil and then simmer for 2 1/2 hours.
Add chopped onion and simmer for 40 minutes more. Add chopped tomato and simmer for 20 minutes more. Turn the burner off and then add the chopped cilantro. Cover and let set for 5 minutes before stirring and serving.
