Shirley's Irresistible Bacon Cheddar Baked Potatoes

Original recipe yields 1 serving
1 jar real bacon bits or 1/2 lb. bacon, fried crisp, crumbled
5 lb new red potatoes
2 pkg (8 oz. each) cream cheese, softened
1 stick butter, softened
1/2-1 cup milk
1 tsp garlic powder or 2 cloves garlic, chopped fine
4 Tbsp dried chopped chives
Adobo seasoning and pepper to taste
2-3 cups sharp shredded cheddar cheese

Preheat oven to 350 degrees F. Fry bacon if you use fresh meat. Boil potatoes in large pan on top of the stove until easily poke a fork into them. While letting potatoes cook, let cream cheese and butter soften.

After potatoes have cooked thoroughly, smash in a 13x9x3 baking pan along with softened cream cheese and butter. Add milk and mix together until smooth. Add chopped garlic or garlic powder and chopped chives, Adobo seasoning and pepper to taste. Stir until mixed thoroughly. Last but not least sprinkle shredded cheddar cheese on top of the potatoes and sprinkle the bacon bits or crumbled bacon on top of the cheese.

Once the potatoes are prepared, place in the oven for 30 minutes or until the cheese has melted and is just starting to brown.
