Sprinkle both sides of fish with garlic powder, and fish seasoning and press in with bottom of spoon. Cover with lime juice and spray on butter substitute.
Put fillets in fish basket being careful not to rub off seasonings. Set aside till you get charcoal ignited and turning gray. If you are not using charcoal with wood pressed in add your own soaked wood chips just before you put on fish.
Start cooking fish turning every 5 minutes to prevent losing moisture. Cook about 20 minutes or until fish gets charred look. You should also stick fork in thickest part of fish before removing from grill to make sure it is done. If you feel any resistance, continue to cook till done.
