1 packet boneless chicken breasts (large)
1 can Anaheim chilies, cut slits down the side and deseed them
Mozzarella cheese, cut into small rectangular shapes
2 eggs, beaten to a scramble
Flour
Italian bread crumbs or seasoned bread crumbs

With the wax paper, put in one chicken breast and beat until flat about little under 1/2 inch. When finished, assemble flat shinny side down and begin to put a chile open flat and then place a rectangle of mozzarella inside. Tuck edges under. Dip into egg mixture, flour, egg, and bread crumbs.

Then place into a buttered casserole dish that can accommodate the breasts. When finished, chill dish for an hour or overnight.

When ready to cook, set oven temp to 350 degrees F and place dish into the oven for 1 1/2 hours or until crust is browned and looks bubbly cheese is melted.
