Mix cracker crumbs, butter and 4 Tbsp. sugar. Press into cake pan.
Then in sauce pan add pineapple, 1/2 cup sugar, cornstarch, 1 cup of water, and food coloring. Mix well and cook until thick; set aside to cool.
Then mix cream cheese and whip cream and 1/2 cup of sugar. Put cream cheese mixture on top of crust. Then pour cooled pineapple mixture on top. Then drop strained maraschino cherries on top and chill.
