Original recipe yields 1 serving
1 1/2 lb chicken breast, cut into chucks
2 Tbsp oil
1 can (13 3/4 oz.) chicken broth
1 can (8 oz.) tomato sauce
1 pkg taco seasoning mix
1 can corn, drained
1 medium green/red pepper or combination, chopped
1 1/2 cups Minute Rice
Sour Cream (optional)
1/2 cup Kraft Shredded Cheddar Cheese

Cook and stir chicken in hot oil until lightly browned.

Add broth, tomato sauce and seasoning mix. Bring to a boil. Reduce heat, cover and simmer 5 min.

Add corn and peppers. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 min. Fluff with fork. Top with sour cream & cheese.
