Preheat oven to 350 degrees F. Lightly spray the bottom of a 9 x 13 baking dish with cooking spray (butter flavor works best).
Mix the rice with the butter and line the bottom of the baking dish. (This works best if your rice is still hot.) Place chicken breasts on top & season to taste with salt and pepper. Sprinkle with green onions, sliced mushrooms, water chestnuts, and black olives. Spread the soup over the entire dish. Sprinkle with parsley.
Bake for 50 minutes or until chicken is no longer pink.
