Peel cucumbers and slice very thin. Set aside in a large bowl and sprinkle with salt to draw the water out and let sit (about 20-30 minutes).
Squeeze cucumbers (a small handful at a time) to get as much of the water out as possible and put the drained cucumbers in a separate bowl. When all cucumbers have been squeezed, add garlic, onions and pepper to taste. Mix in sour cream to thoroughly coat cucumbers. Salt to taste.
Refrigerate to blend flavors. For a decorative look, sprinkle paprika on top.
