Homestyle Pea Soup

Original recipe yields 1 serving
1 lb dried green split peas
1-1 1/2 lb smoked pork neck bones
6-8 cups water
2 cloves garlic minced fine
1 small onion, diced fine
1-2 carrots, peeled and grated
Fresh ground pepper to taste
Optional: 1/4 cup chopped parsley
1/4 cup sour cream

Rinse split peas and check for small stones. Drain and set aside.

In large stock pot (4-6 qt) cover pork neck bones with water. Bring to a boil. Drain water.

Add 6-8 cups fresh water and bring to boil again. Reduce heat to a slow simmer. Remove neck bones and set aside to cool. While water is boiling, prepare garlic, onion and carrots. Add to pork broth. Add rinsed peas. Simmer covered for 30-40 minutes. When neck bones are cool, remove meat and cut into bite size pieces. Discard bones. Add meat to broth and vegetable mixture. Add pepper to taste.
