Frozen Fruit Salad

Original recipe yields 1 serving
1 tsp Knox Unflavored Gelatine
3 Tbsp fruit juice
1/3 cup Kraft Mayonnaise
2/3 cup heavy cream
2 tsp powdered sugar
2 cups fruit (fresh, frozen or canned)

Soak the gelatin in the fruit juice. Let it soak for a few minutes. Then dissolve it over a pot of hot water. After it is dissolved, add it slowly to the mayonnaise, stirring constantly so it does not curdle or get lumpy. Whip together the heavy cream and powdered sugar. Fold this into the mayonnaise, and then fold this into the fruit.

Line a loaf pan with aluminum foil. Turn the mixture into the loaf pan and freeze. Stir it once when it is half frozen, and then cover with more foil.

To serve: Remove from freezer about 20 minutes before serving. Soak the bottom of the loaf pan in warm/hot water for a few minutes. Then you should be able to lift the aluminum foil from the pan. Cut into slices, and serve on a lettuce leaf drizzled with a little mayonnaise and a maraschino cherry.
