Preheat oven to 350°F. Beat sugar and butter until blended. Beat for 5 min. Beat ricotta, and eggs until combined. Add flour, baking powder and salt, beat until dough forms.
Drop by level Tablespoon about 2-inchs apart on baking sheet. Bake 15 minutes.
When cool, prepare icing and spread with a spatula. Allow to dry.
