Preheat oven to 350 degrees F. Grease pan. Spread one pkg. of crescent rolls flat in a 9x13 inch pan. Mix cream cheese, egg yolk, sugar and vanilla in bowl and spread across first layer of crescent rolls.
Layer the other pkg. of crescent rolls over that. Beat egg white and spread over dough and then sprinkle with the cinnamon, sugar mixture.
Bake for 25-30 minutes or until lightly brown. Refrigerate and cut when they are cool.
