Original recipe yields 1 serving
4-5 medium tomatoes
1 garlic head (decrease to 1/2 garlic head if you don't like garlic)
1 package fettuccine
4-5 slices flavored pork or bacon or Italian sausage
Salt and pepper to taste
2 Tbsp olive oil
A few sprigs of fresh sage (or 2 Tbsp. dried)
Parmesan cheese (optional)

Preheat oven to 350 degrees F. Cut the tomatoes in half, lengthwise and place in a baking dish in a single layer with the skin side up. Peel the garlic and throw in the whole garlic cloves with the tomatoes. Roast the tomatoes and garlic for about 25-30 min or until the skin of the tomatoes is a lil dark and wrinkled.

Meanwhile, boil the pasta and brown the pork in the olive oil. When the pork is done, take it out and cut it in small pieces. Reserve the oil.

When the tomatoes are done, remove skin, add tomatoes with the juice and garlic to the reserved oil and break with the back of a wooden spoon. Add in the sage, pork and pasta and cover. Cook for another 5-7 minutes so the flavors can mingle. Serve immediately with a sprinkling of parmesan cheese.
