Original recipe yields 1 serving
8 cups canned beef broth
1 cup small elbow macaroni
2 Tbsp olive oil
1 cup chopped onions
2 large cloves garlic - pressed
1 tsp oregano
1 tsp basil
1/2 tsp thyme
1 lb ground beef
1 can (28 oz.) Italian tomatoes (diced)
2 medium zucchini
1 pkg (10 oz.) frozen mixed vegetables
1 can (15 oz.) kidney beans (juice and all)
Salt to taste
Parmesan cheese

Bring broth to boil, add macaroni. Cook to taste, remove from heat.

Heat oil in skillet, add onions, garlic, herbs and saute till limp. Add ground beef. Cook until no pink remains in meat.

Add tomatoes and break up. Add zucchini and frozen veggies. Simmer 15 min. Add to broth and macaroni, add kidney beans and juice. Season and serve with parmesan cheese.
