Original recipe yields 1 serving
3-5 chicken breast, cooked & cubed
1 lb (16 oz.) spaghetti, cooked
1 onion, chopped
1 bell pepper, chopped
1 lb Velveeta Cheese
1 can Ro*Tel (mild, regular, extra hot, Italian harvest, etc.) your choice
1 can cream of chicken soup (prefer Campbell's)
1 can cream of mushroom or celery (prefer Campbell's)

Boil & cube chicken breast, cook spaghetti (set both aside). Saute chopped onion & bell pepper.

In a large pot, add cheese, Ro*Tel, soups, onions & bell pepper and cooked & cubed chicken, stirring frequently until the cheese is melted.

In a casserole dish, layer spaghetti & mixture. Place in oven for 5 minutes on 300 degrees F, until cheese is melted.
