1/2 cup petit diced tomatoes (canned- you can also use flavored varieties, such as garlic and onions, for added flavor)

Let's Make It
In a small or medium skillet, pour rice, 1 cup water, and Boca Crumbles. Bring to a boil, and reduce heat to medium high. Cook until rice absorbs water (about 5 minutes, but watch closely), stirring as needed.
Add 1/2 cup water and tomatoes. Continue cooking until water is once again absorbed, stirring occasionally. Reduce heat to medium and cover rice with shredded cheese. Allow cheese to melt and remove from heat.
Have two bowls ready. Put 1/4 cup corn chips into each bowl. Divide rice into two servings and put one in each bowl over corn chips. Drizzle desired amount of taco sauce over each serving.
