Preheat oven to 325 degrees F. Coat both sides of flour tortillas with cooking spray. Sprinkle both sides with 2 Tbsp. cinnamon sugar. Cut into 4 wedges.
Line a baking sheet with aluminum foil. Bake for 20 minutes. Turn over halfway through cooking.
Spoon 1/2 cup of vanilla ice cream in 6 serving dishes. Crush half the tortillas on the ice cream. Serve with 2 additional crisp and 1 cherry on top.
