Strawberry Rhubarb Pudding

Original recipe yields 1 serving
4 cups raw rhubarb (do not use frozen)
1 cup white sugar
1 package Jell-O Strawberry Flavor Gelatin
1 pouch packet white cake mix
1 cup water
5 Tbsp melted butter

Preheat oven to 350 degrees F. Grease 8x8 inch glass baking dish.

Put rhubarb into bottom of the dish. Sprinkle with sugar. Sprinkle DRY Jell-O powder over the top. Shake DRY cake mix as the next layer. Pour water very carefully over the top of the above. Melt butter and drizzle over the entire top of the mixture. DO NOT MIX OR STIR.

Bake in the oven for 1 hour or until the top is lightly browned. Remove and let cool for 2 hours to allow Jell-O to set. Serve with vanilla ice cream or Cool Whip.
