Dressing: Combine all ingredients in a jar. Mix well to combine.
Salad: Shred cabbage and marinate in 1 cup of dressing for 1 hour in refrigerator.
Crumble gorgonzola cheese and reserve. Wash Bibb lettuce and escarole or other greens. When ready to serve, toss lettuce with enough dressing to coat and arrange on individual plates. Garnish with purple cabbage, red pepper, and apple slices. Top with gorgonzola cheese.
