2 lb ground turkey breast (or ground chicken breast)
12 oz frozen chopped spinach (defrosted)
1 large egg
3/4 cup seasoned bread crumbs
1/2 tsp salt
1/2 tsp fresh ground pepper
3 cloves garlic, chopped
1 Tbsp your favorite seasoning (I like Emeril's Original Essence)
1/2 cup finely chopped onion
3 slices bacon, chopped

Let's Make It
Put meat in a large bowl. Drain defrosted spinach about half way (the extra water in the spinach will help keep meat moist). Add egg, bread crumbs, salt, pepper, garlic and seasoning. Use your hands to mix together, but don't over mix or meat will be tough. Fold in onion and bacon. You can make this the night before to let flavors absorb, but it will still taste good if made right before baking.
Line a cookie sheet with parchment paper. Shape the meat on lines cookie sheet in a rectangle about 2 inches thick. Make sure meat is flattened evenly to ensure even cooking. Cooking the meat this way on a cookie sheet instead of in a loaf pan will prevent meat from sticking to the dish and let any excess fat drip off of the meat.
Preheat oven to 350 degrees F and bake for 30-35 minutes. This is an ideal recipe for low carb dieters too, since low carb bread crumbs are available on the market now.
