Original recipe yields 1 serving
2 stalk s celery, rough cut
2-3 carrots, rough cut (or 1 bag prewashed baby carrots)
1 onion, rough chopped
4-6 boneless skinless chicken breasts
Seasonings of choice (I use salt & pepper, garlic, thyme or dill)
1 can mushrooms, drained (or 1 box fresh mushrooms, sliced)
1 can Campbell’s cream of mushroom soup
8 red potatoes, scrubbed & sliced in half (optional)

In crock-pot layer:

1. All of celery, carrots, and onions on the bottom

2. 1/2 of the seasoned (both sides) chicken

3. 1/2 of the mushrooms

4. 1/2 can mushroom soup

5. Repeat layers 2, 3, and 4 (make sure soup is on top)

6. Add potatoes last if using

Cook on low 8-9 hours and enjoy! The chicken is fork tender and the gravy is ample to serve with potatoes or rice!
