1 Tbsp dried bacon flakes
2 celery stalks, thinly sliced
3-4 hard boiled eggs, diced
Salt and pepper

1. Boil potatoes until just tender, (do not overcook) and drain.

2. In a large bowl add first 5 ingredients, gently stir.
