Original recipe yields 1 serving
1 loaf (16 oz.) French bread, cut into 1/2 slices
2 jars (7 1/2 oz. each) roasted red peppers, drained, cut into 1/2 pieces
1 cup grated parmesan cheese
1 cup sliced green onions
3 cups (12 oz.) shredded mozzarella cheese
8 eggs
3/4 cup milk
1 container (7 oz.) prepared pesto
2 tsp minced garlic
3/4 tsp salt

GREASE: 13 x 9 dish. Arrange 1/2 bread slices in single layer on bottom of prepared dish. Top bread with 1/2 peppers, 1/2 cup parmesan cheese, 1/2 cup green onions, 1 1/2 cups mozzarella. Repeat layers.

COMBINE: eggs, milk, pesto, garlic, salt in medium bowl. Whisk to combine. POUR: egg mixture evenly over strata. COVER and refrigerate overnight.

PREHEAT oven 375°F. Bake, uncovered, 30 min. or until hot and bubbly.
