Original recipe yields 1 serving
1 egg
3 Tbsp sugar
3 Tbsp cider vinegar
1 pkg (8 oz.) cream cheese (can use low-fat)
3 Tbsp finely chopped green pepper
3 Tbsp finely chopped sweet onion
1 small jar pimento, drained well

In a double boiler add the egg, sugar and vinegar and stir until mixture begins to thicken. Then add cream cheese, green pepper, sweet onion and pimento. Continue to stir ingredients until thick like vanilla pudding consistency. Let stand to cool for about 10 minutes then transfer to a covered container.

Place in the refrigerator for at least 3-4 hours or overnight is best before serving.

Stir mixture and pour into a serving dish and spread mixed vegetables around on a serving platter. The following vegetables work best: small baby carrots, green & red pepper slices, celery slices and broccoli florets.
