Original recipe yields 1 serving
1/3 cup sugar
Grated rind of 1 lemon or orange
1/2 tsp nutmeg
1/4 tsp cinnamon
Pinch salt
1 stick butter
2 cups bread crumbs
2 cups stewed rhubarb

1) In a small bowl, stir together sugar, rind, nutmeg, cinnamon and salt. In a large microwave bowl, melt the butter, stir in the bread crumbs. Stir in the sugar mixture.

2) On the bottom of a baking dish, make a layer of 1/3 of crumbs. Over them, spoon an even layer of 1 cup rhubarb; repeat the layers of bread crumbs and rhubarb. End with a layer of bread crumbs.

3) Bake covered at 350 degrees F for 15 minutes. Remove the cover and continue to cook for 25 minutes more or until top is golden brown.
