Original recipe yields 1 serving
3 boneless & skinless chicken breasts
1 large green pepper
1 large onion
2 medium tomatoes
10 (10-inch) tortillas
1/2 cup refried beans (pureed)
2 cups grated old cheddar cheese
2 cups piquante salsa
Salt and pepper to taste

Cook chicken until still pink in the center. Dice all the vegetables small. Dice chicken when cool.

Take a tortilla and spread some refried beans and a bit of salsa. Then add layers of the chicken and vegetables and a small amount of grated cheese, then roll up and fold in ends as you roll. Place each tortilla in a baking dish snuggly. Spread a good layer of salsa over the entire dish and then add a good layer of cheese as well.

Bake at 325 degrees F for about 1/2 an hour or until a golden color appears on the cheese.
