Cook snow peas in boiling water for 1 minute. Drain and arrange on 4 plates.
Heat oil and cook shrimp gently or until they turn pink, turning over halfway through cooking. Add lime juice, lime peel, ginger and soy sauce. Cook 1 minute longer. Arrange shrimp a top snow peas; pour hot pan juices over shrimp and serve.
