8 cups new potatoes, boiled, peeled and cubed
1/2 cup Vidalia onions, chopped
1/2 cup celery
2 Tbsp parsley, chopped
1 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
1/2 cup Athenos Blue Cheese, crumbled
2 cups Breakstone's Sour Cream
1/4 cup white wine vinegar

Boil potatoes about 25-30 minutes or until tender. Drain and let cool.

In a large bowl, combine potatoes, onions, celery, parsley, salt, pepper, and garlic powder.

In another bowl, mix together blue cheese, sour cream and vinegar. Pour over potatoes and toss to coat.

Chill overnight. Garnish with fresh parsley before serving.
