1 small to medium zucchini (do not peel, leave skin on)
2 Tbsp margarine
1/4 cup shredded cheese (any flavor)

Let's Make It
Wash & trim zucchini. Slice zucchini lengthwise. Scoop out seeds. Spread with margarine. Put both sides together & wrap in foil.
Put on medium hot grill; turn in approximately 5-7 minutes. Press with tongs or use fork to test that zucchini is crisp tender.
Take off grill, unwrap foil and lay each side skin side down. Sprinkle with cheese, and put back on the grill. Shut lid for an additional 1-3 minutes or until cheese has melted. (Instead of using shredded cheese, you can use parmesan instead, just sprinkle). Take off the grill and enjoy with your favorite entrée.
