Chop or slice the potatoes, celery and onion. Mix together. Season with the seasonings listed.
Add enough vegetable oil to cover the bottom of pan. Add potato mixture and cover.
Cook on medium heat and let simmer stirring or flipping over potatoes often until they are tender or done to your preference.
