Original recipe yields 1 serving
Olive oil
1 diced onion
1 piece of celery, diced
4 tablespoons pre-mixed Cajun seasoning to taste (approx.)
2 cans black beans
1 package hot smoked beef sausage
1 package fully cooked chicken breast strips
Salt and pepper
2 cups instant rice

Begin with a large pot, coat the bottom with olive oil on medium-high heat until the oil becomes "slick."

Add onion to the pan with the celery, sprinkle on Cajun seasoning until it changes the color of the onion. Sweat the vegetables until they are translucent. Reduce heat.

Add 2 cans of black beans to the pot, bring to a small boil, add more seasoning to taste and then reduce the heat once more.

Cut smoked sausage into 1/4 slices, and chicken breasts pieces into bite-sized cuts. Add meat to the pot of beans and stir.

Cook two cups of instant rice, either brown or white, according to manufacturer's instructions.

When rice is complete and the meat has been thoroughly warmed, serve beans and meat on top of rice and enjoy
