Pierce sweet potato with a sharp knife on both sides and bake in microwave for 10 minutes <5 minutes on each side> or until done.
Scoop out and mash the potato and let cool for a few minutes. Add beaten egg, bread crumbs and mayonnaise and mash together with clean hands and form hamburger like patties. Dip in more crumbs.
Fry on both sides in a little butter in a saute pan until golden brown. Serve with nice green salad to complete the meal. Enjoy.
