Original recipe yields 1 serving
1 lb penne pasta
1 lb ground Italian sausage
1 small white onion
1 small green pepper
1 cup sliced fresh mushrooms
2 small diced fresh tomatoes or 1 medium can tomatoes
Parmesan cheese

Cook pasta according to package direction. Brown ground sausage in large skillet (cast iron preferred) with onions, peppers, mushrooms, and tomatoes. Save juices from meat and veggies in skillet.

Drain pasta and rinse with cold water to remove starch. Run hot water over pasta to heat, drain.

Add meat and veggie mix to pasta in skillet and mix well. Add parmesan cheese to each plate as desired.
