Original recipe yields 1 serving
2 eggs
1 cup sugar
1 cup gluten free flour (i.e. rice flour, 4 bean flour)
6 Tbsp potato starch
2 Tbsp tapioca flour
1 tsp xanthan gum
1/3 tsp salt
1/4-1/3 tsp baking powder
1/4-1/3 tsp baking soda
3/4 cup buttermilk
1 tsp vanilla

Preheat oven to 325°F. Cream eggs and sugar well. Combine flour, potato starch, tapioca flour, xanthan gum, salt, baking powder and baking soda in a large bowl. Add dry ingredients alternating with wet (buttermilk, and vanilla) to creamed mixture. Don't overbeat.

Pour into greased and floured 9x4-inch pan.

Bake for 50 minutes.
