2 L arge Bell Peppers
1 L arge Onion
1 package Kraft Monterey Jack & Colby Shredded Cheese
2 Sticks of Butter

Peel then dice potatoes into barely larger than bite-sized pieces. Wash, core and slice bell peppers. Chop onion into long slices, about 1 inch long. In a 13x9x2 pan, spray with Pam and add all ingredients except cheese. Bake at 400 for about an hour, or until potatoes are soft, then add cheese over top. Cook until cheese is melted!!
