Original recipe yields 1 serving
4 large potatoes, peeled & cubed
1 tsp salt (optional)
1 cup fresh chives
8 oz sour cream
2 cups Kraft Velveeta Cheese, cubed
1 cup milk
3/4 cup real bacon bits

Boil potatoes with salt until tender. Drain and mash adding chives and sour cream; mix well.

Preheat oven to 325°F. Spray a casserole dish (about 8x11 size) with non-stick spray and add potato mix. Spread evenly. Then press down the center forming about a 1-inch crust along the edges.

Heat Velveeta cheese and milk on med/high heat until completely melted, stirring constantly. Pour melted cheese onto center of potato mix and sprinkle with bacon bits.

Bake about 25 minutes or until crust starts to brown. Let stand about 8 minutes and serve.
