10 chicken pieces of choice (best with breasts and legs)
1 Tbsp olive oil
1 can beef consomme
3 Tbsp tomato paste
1 soup can (or about a cup) of cheap red wine
Canned or fresh sliced mushrooms (lots!)

Let's Make It
Brown chicken in olive oil, drain any left oil. Mix consomme, tomato paste and wine together in separate bowl.
Place chicken in a large pot, add mushrooms and liquid mixture to cover chicken. Cover and simmer until chicken falls apart easily. Mushrooms will cook down a lot, so you can add mushrooms later in the cooking if you prefer them larger and firmer. If you need more liquid, you can add more consomme and wine and another Tbsp. of tomato paste.
