In a skillet large enough for the chicken breast, place enough vegetable oil to brown the chicken. Add chicken and cook thoroughly.
Remove chicken breast from the skillet and squeeze the juice from the lemons into the skillet. Add honey and mustard (be generous). Stir until a nice bubbly sauce appears.
Place chicken breast back into skillet, coating both sides with sauce and let simmer for approx. 10 minutes.
