2 cups ripe strawberries, hulled and chopped
2 tablespoons fresh mint leaves, chopped
2 tablespoons sugar
2 tablespoons dark rum
1/2 teaspoon freshly ground black pepper

Gently wash berries and pat dry. To hull, cut off green tops and insert paring knife in top of berry. Gently circle berry core until center can be removed easily. Chop berry into small chunks.

Combine berries with remaining ingredients.

Serve with grilled catfish or chicken. This also would be tasty served over ice cream or pound cake.
